Low Carb. Herbed Grain Free Cracker

Ingredients:

  • 2 cups balanced almond flour
  • 1 tsp. Trader Joes bagel sesame seasoning blend (a few extra shakes extra)
  • 1 tsp. onion powder
  • 1 tsp. poppy seeds
  • 1 tsp. sesame sees
  • 1 tsp. dried thyme
  • 1 tsp. dried rosemary
  • ½ tsp. salt
  • 1 tbsp. Smokey Chipotle (Cheezy Farm,  kellyscroutons.com)
  • 1 egg
  • 1 tbsp. olive oil
  • 1 tsp. purified water

Preparation: Preheat oven 350 degrees

In a small bowl, whisk olive oil, egg and water till well blended.

In a large bowl combine all dry ingredients, almond flour, dried onion powder, salt and dried herbs.

Pour egg mixture over dry ingredients and blend well with a spoon. Use your hands once you have the mixture well blended and form a dough ball.

Place the dough ball between two pieces of parchment paper and roll out dough using a rolling pin to about ¼ inch thick.

Remove top piece of parchment paper, using a pizza cutter or sharp knife, trim the dough to form an even rectangle shape. Set dough scraps aside.

Cut the dough into 2” x 2 “squares. Do not remove cut dough squares dough squares; instead transfer the entire sheet of parchments with cut dough onto baking sheet.

Make a small dough ball out of the scraps and re-roll, place on cooking sheet by turning the parchment paper over and releasing rolled out dough onto cooking sheet and trim edges to for rectangle.

Top cracker with a few sprinkles of bagel sesame seasoning blend, then press the seasoning into cracker with your finger tips.

Bake for 12-14 minutes until cracker along the outer edge are golden brown. Turn off oven and open the oven door just a crack. Leave open to allow the majority of the heat to escape while the crackers finish crisping up to about 2-5 minutes.

Remove crackers out of oven and allow them to cool. Remove the crackers that are crisp and set aside to cool. If some of the crackers are still a bit moist place them back into warm oven and close oven door but do not turn oven back on.  Check on them every few minutes to make sure they don’t over crisp.

To keep the crackers crispy, store in an airtight container in the freezer. You can eat them cold straight out of freezer or let them set out at room temperature and serve with your favorite dip or salad.
