Asian Style Green Bean and Asparagus
Ingredients: Serves 4-6
- 1 ½ cup, julienne sliced green bean
- 1 ½ cup, julienne sliced asparagus
- 1 red bell pepper julienne sliced
- 1 Serrano chili julienne sliced
- 1-2 tbsp. walnut oil
- ¼ cup of chicken stock or water
- 1 tbsp. coconut amino acids
- 1 tbsp. finely grated ginger
- 1-2 tbsp. fish sauce
- 1 tbsp. roasted sesame seeds
Heat a wok over medium to high, add walnut oil and sauté the green beans, chile, ginger and asparagus for 2 minutes than add bell pepper. Saute for about 5 minutes or until tender but firm. Sprinkle sesame seeds over the top and serve. Option the sprinkle grilled shallots over the top for garnish.
Asian Salad Dressing
Ingredients:
- 1 small red or green chile chopped
- 1 clove garlic, filly chopped
- 1 tbsp. coconut sugar
- 2 tbsp. thai fish sauce
- 1 ½ tbsp. fresh lime juice
- 1 ½ tbsp. unseasoned rice vinegar
- 3 tbsp. chopped fresh cilantro
Directions:
Place all the ingredients a food processor on high speed blend until smooth. Add a little salt if needed. Serve with a baby green salad of your choice.
