Asian Style Green Bean and Asparagus

Ingredients: Serves 4-6

  • 1 ½ cup,  julienne sliced green bean
  • 1 ½ cup, julienne sliced asparagus
  • 1 red bell pepper julienne sliced
  • 1 Serrano chili julienne sliced
  • 1-2 tbsp. walnut oil
  • ¼ cup of chicken stock or water
  • 1 tbsp. coconut amino acids
  • 1 tbsp. finely grated ginger
  • 1-2 tbsp. fish sauce
  • 1 tbsp. roasted sesame seeds

 

Heat a wok over medium to high, add walnut oil and sauté the green beans, chile, ginger and asparagus for 2 minutes than add bell pepper. Saute for about 5 minutes or until tender but firm. Sprinkle sesame seeds over the top and serve. Option the sprinkle grilled shallots over the top for garnish.

 

Asian Salad Dressing

Ingredients:

  • 1 small red or green chile chopped
  • 1 clove garlic, filly chopped
  • 1 tbsp. coconut sugar
  • 2 tbsp. thai fish sauce
  • 1 ½ tbsp. fresh lime juice
  • 1 ½ tbsp. unseasoned rice vinegar
  • 3 tbsp. chopped fresh cilantro

Directions:

Place all the ingredients a food processor on high speed blend until smooth. Add a little salt if needed. Serve with a baby green salad of your choice.
