Coconut Macaroons – 1 ½ dozen

Ingredients:

  • Ghee for greasing cooking sheet
  • 1/3 cup coconut flour
  • 1/3 cup cocoa nibs
  • 2 ½ cup shredded unsweetened coconut flakes
  • 1/8 tsp salt
  • 2/3 cup sweetened coconut milk
  • 1 tsp. vanilla extract

Preparations:

Preheat oven to 350 degrees. Grease a cookie sheet well. Mix the flour, coconut, and salt together in a bowl. Pour in the condensed milk, vanilla, Cacao nibs and stir well to make a thick batter.

Drop the batter by large spoonfuls onto the well-greased cookie sheet; allow an inch of space between the cookies. Bake until golden brown, 15 minutes. Remove the pan and cool on racks.
