Low Carb Keto Oven Fried Chicken Drumsticks

Ingredients: Serves 4-6

  • 8 organic drumsticks
  • 1/3 cup coconut flour
  • ½ cup parmesan cheese
  • 1tsp. celtic salt
  • 1tsp. dried Italian seasoning
  • 1tsp. thyme
  • 2 tsp. 21 seasonings
  • 3 Tbsp. dijon mustard
  • 2 Tbsp. melted butter
  • 1 tsp. smoked paprika
  • 1 tsp. garlic powder
  • ½ tsp chipotle seasoning
  • Black pepper

Preparation:

Preheat oven to 400 F Bake time 40- 45 minutes

In a large bowl place the dry ingredients and seasoning and mix well. Set aside. Put Dijon mustard and melted butter in a bowl and coat chicken. Dip the chicken in the coconut mixture and coat evenly, shake off any excess flour. Place on a parchment covered baking sheet, then spray with coconut oil. Bake for 15 minutes turn chicken over spray chicken with coconut oil and continue baking.  Make sure to spray coconut oil over drumsticks every 15 minutes to keep chicken crisp. Turn oven down to 375 for the last 25 minutes and continue cooking till golden brown.
